Ingredients

  • Arborio rice - 150 grams
  • Barolo wine - 200 ml
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Shallot - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Mushrooms (e.g., porcini or cremini) - 150 grams, sliced
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth and keep it warm over low heat.
  2. In a separate large pan, heat the olive oil over medium heat and add the chopped shallot. Sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced mushrooms to the pan, cooking until the mushrooms are tender and any liquid has evaporated, about 5-7 minutes.
  4. Stir in the Arborio rice and toast for 2 minutes, ensuring each grain is coated with oil.
  5. Pour in the Barolo wine and stir continuously until it is mostly absorbed by the rice.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
  7. Once the rice is cooked, remove the pan from heat and stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
  8. Let the risotto rest for a couple of minutes before serving, garnishing with additional parsley and Parmesan if desired.
