- Garlic - 1 clove, minced
- Mushrooms (e.g., porcini or cremini) - 150 grams, sliced
- Parmesan cheese - 50 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the vegetable broth and keep it warm over low heat.
- In a separate large pan, heat the olive oil over medium heat and add the chopped shallot. Sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the pan, cooking until the mushrooms are tender and any liquid has evaporated, about 5-7 minutes.
- Stir in the Arborio rice and toast for 2 minutes, ensuring each grain is coated with oil.
- Pour in the Barolo wine and stir continuously until it is mostly absorbed by the rice.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
- Once the rice is cooked, remove the pan from heat and stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
- Let the risotto rest for a couple of minutes before serving, garnishing with additional parsley and Parmesan if desired.
