Ingredients

  • Arborio rice - 150g
  • Fresh shrimp (peeled and deveined) - 200g
  • Chicken or seafood broth - 500ml
  • White wine - 100ml
  • Shallot - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Parmesan cheese - 30g, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the chicken or seafood broth over low heat and keep it warm.
  2. In a separate large pan, heat the olive oil over medium heat, then add the chopped shallot and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.
  3. Add the Arborio rice to the pan, stirring for about 2 minutes until the rice is lightly toasted.
  4. Pour in the white wine and stir until it is mostly absorbed by the rice.
  5. Begin adding the warm broth one ladle at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next ladle, about 18-20 minutes total cooking time until the rice is creamy and al dente.
  6. In the last 5 minutes of cooking, add the fresh shrimp to the risotto, stirring gently until they turn pink and are cooked through.
  7. Remove the pan from heat, then stir in the butter, grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
  8. Let the risotto sit for a minute before serving, garnishing with additional parsley if desired.
