- Fresh shrimp (peeled and deveined) - 200g
- Chicken or seafood broth - 500ml
- White wine - 100ml
- Shallot - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Parmesan cheese - 30g, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the chicken or seafood broth over low heat and keep it warm.
- In a separate large pan, heat the olive oil over medium heat, then add the chopped shallot and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.
- Add the Arborio rice to the pan, stirring for about 2 minutes until the rice is lightly toasted.
- Pour in the white wine and stir until it is mostly absorbed by the rice.
- Begin adding the warm broth one ladle at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next ladle, about 18-20 minutes total cooking time until the rice is creamy and al dente.
- In the last 5 minutes of cooking, add the fresh shrimp to the risotto, stirring gently until they turn pink and are cooked through.
- Remove the pan from heat, then stir in the butter, grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
- Let the risotto sit for a minute before serving, garnishing with additional parsley if desired.
