Steps
- Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped shallot, and sauté until translucent.
- Add the mixed seafood to the skillet and cook for about 3-4 minutes until they start to turn opaque.
- Pour in the white wine and let it simmer for 2 minutes, allowing the alcohol to evaporate.
- Stir in the cauliflower rice and mix well, allowing it to absorb the flavors.
- Gradually add the fish stock, one ladle at a time, stirring continuously until the cauliflower rice is tender and creamy, about 10-12 minutes.
- Once the cauliflower rice is cooked, stir in the grated Parmesan cheese, chopped parsley, lemon juice, salt, and black pepper to taste.
- Remove from heat and let it sit for a minute before serving.
