  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped shallot, and sauté until translucent.
  2. Add the mixed seafood to the skillet and cook for about 3-4 minutes until they start to turn opaque.
  3. Pour in the white wine and let it simmer for 2 minutes, allowing the alcohol to evaporate.
  4. Stir in the cauliflower rice and mix well, allowing it to absorb the flavors.
  5. Gradually add the fish stock, one ladle at a time, stirring continuously until the cauliflower rice is tender and creamy, about 10-12 minutes.
  6. Once the cauliflower rice is cooked, stir in the grated Parmesan cheese, chopped parsley, lemon juice, salt, and black pepper to taste.
