- Arborio rice - 160 grams (3/4 cup)
- Fresh artichokes - 2 medium
- Vegetable broth - 500 ml (2 cups)
- White wine - 100 ml (1/2 cup)
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Prepare the artichokes by removing the tough outer leaves and cutting them into quarters. Remove the choke and slice them thinly. Place them in a bowl of water with lemon juice to prevent browning.
- In a saucepan, heat the vegetable broth over low heat. Keep it warm but not boiling.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.
- Add the sliced artichokes to the skillet and cook for about 5-7 minutes until they are tender, stirring occasionally.
- Stir in the Arborio rice and cook for 2 minutes, allowing the rice to toast slightly.
- Pour in the white wine and let it simmer until mostly absorbed, stirring constantly.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process for about 18-20 minutes until the rice is al dente and creamy.
- Once the rice is cooked, remove the skillet from heat. Stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
- Let the risotto sit for a minute before serving. Garnish with additional parsley and a sprinkle of Parmesan cheese if desired.
