Ingredients

  • Arborio rice - 160 grams (3/4 cup)
  • Fresh artichokes - 2 medium
  • Vegetable broth - 500 ml (2 cups)
  • White wine - 100 ml (1/2 cup)
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Prepare the artichokes by removing the tough outer leaves and cutting them into quarters. Remove the choke and slice them thinly. Place them in a bowl of water with lemon juice to prevent browning.
  2. In a saucepan, heat the vegetable broth over low heat. Keep it warm but not boiling.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.
  4. Add the sliced artichokes to the skillet and cook for about 5-7 minutes until they are tender, stirring occasionally.
  5. Stir in the Arborio rice and cook for 2 minutes, allowing the rice to toast slightly.
  6. Pour in the white wine and let it simmer until mostly absorbed, stirring constantly.
  7. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process for about 18-20 minutes until the rice is al dente and creamy.
  8. Once the rice is cooked, remove the skillet from heat. Stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
  9. Let the risotto sit for a minute before serving. Garnish with additional parsley and a sprinkle of Parmesan cheese if desired.
