  • Cherry tomatoes - 100 grams, halved
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the Riso Venere under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the diced zucchini and red bell pepper to the saucepan, cooking for about 5 minutes until slightly softened.
  4. Drain the soaked Riso Venere and add it to the saucepan along with the vegetable broth. Bring to a boil, then reduce the heat and simmer, covered, for about 30 minutes or until the rice is tender and the liquid is absorbed.
  5. While the rice is cooking, rehydrate the seaweed according to package instructions. Once ready, chop it into bite-sized pieces.
  6. In a small bowl, combine the halved cherry tomatoes, rehydrated seaweed, lemon juice, remaining olive oil, salt, and pepper. Mix well.
