- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced

- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the Riso Venere under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the diced zucchini and red bell pepper to the saucepan, cooking for about 5 minutes until slightly softened.
- Drain the soaked Riso Venere and add it to the saucepan along with the vegetable broth. Bring to a boil, then reduce the heat and simmer, covered, for about 30 minutes or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, rehydrate the seaweed according to package instructions. Once ready, chop it into bite-sized pieces.
- In a small bowl, combine the halved cherry tomatoes, rehydrated seaweed, lemon juice, remaining olive oil, salt, and pepper. Mix well.
