- Sea bass fillets - 250 grams, skinless and boneless
- Shrimp - 150 grams, peeled and deveined
- White wine - 100 ml
- Vegetable broth - 500 ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the Riso Venere under cold water until the water runs clear, then soak it in water for about 30 minutes.
- In a saucepan, heat 1 tablespoon of olive oil over medium heat and add the minced garlic, sautéing until fragrant, about 1-2 minutes.
- Add the halved cherry tomatoes to the saucepan and cook until they start to soften, about 5 minutes.
- Pour in the white wine and let it reduce by half, stirring occasionally, for about 3-4 minutes.
- In a separate pot, bring the vegetable broth to a simmer. Add the soaked Riso Venere and cook for about 30 minutes or until tender, adding more broth if necessary.
- In the saucepan with tomatoes, add the shrimp and sea bass fillets, cooking for about 5-7 minutes until the fish is opaque and the shrimp are pink and cooked through.
- Stir in the chopped parsley, lemon juice, and season with salt and pepper to taste.
- Once the Riso Venere is cooked, drain any excess liquid and fluff it with a fork. Divide the rice into two bowls and top with the seafood mixture.
- Drizzle with the remaining olive oil and garnish with additional parsley if desired before serving.
