  • Riso Venere (black rice) - 150 grams

  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Sea bass fillets - 250 grams, skinless and boneless
  • Shrimp - 150 grams, peeled and deveined
  • White wine - 100 ml
  • Vegetable broth - 500 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the Riso Venere under cold water until the water runs clear, then soak it in water for about 30 minutes.
  2. In a saucepan, heat 1 tablespoon of olive oil over medium heat and add the minced garlic, sautéing until fragrant, about 1-2 minutes.
  3. Add the halved cherry tomatoes to the saucepan and cook until they start to soften, about 5 minutes.
  4. Pour in the white wine and let it reduce by half, stirring occasionally, for about 3-4 minutes.
  5. In a separate pot, bring the vegetable broth to a simmer. Add the soaked Riso Venere and cook for about 30 minutes or until tender, adding more broth if necessary.
  6. In the saucepan with tomatoes, add the shrimp and sea bass fillets, cooking for about 5-7 minutes until the fish is opaque and the shrimp are pink and cooked through.
  7. Stir in the chopped parsley, lemon juice, and season with salt and pepper to taste.
  8. Once the Riso Venere is cooked, drain any excess liquid and fluff it with a fork. Divide the rice into two bowls and top with the seafood mixture.
  9. Drizzle with the remaining olive oil and garnish with additional parsley if desired before serving.
