Ingredients

  • Riso Venere (black rice) - 150 grams
  • Shrimp (peeled and deveined) - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - 10 grams, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 500 ml

Steps

  1. Rinse the Riso Venere under cold water until the water runs clear. Set aside.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the Riso Venere to the saucepan and toast for 2-3 minutes, stirring frequently.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the rice is tender and the liquid is absorbed.
  5. While the rice is cooking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the shrimp, season with salt and pepper, and cook for about 3-4 minutes until they turn pink and opaque.
  6. Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they soften.
  7. Stir in the chopped basil and lemon juice, then remove from heat.
  8. Once the rice is done, fluff it with a fork and divide it between two plates. Top with the shrimp and tomato mixture.
