- Riso Venere (black rice) - 150 grams
- Shrimp (peeled and deveined) - 200 grams

- Cherry tomatoes - 150 grams, halved
- Fresh basil - 10 grams, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 500 ml
Steps
- Rinse the Riso Venere under cold water until the water runs clear. Set aside.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the Riso Venere to the saucepan and toast for 2-3 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the shrimp, season with salt and pepper, and cook for about 3-4 minutes until they turn pink and opaque.
- Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they soften.
- Stir in the chopped basil and lemon juice, then remove from heat.
- Once the rice is done, fluff it with a fork and divide it between two plates. Top with the shrimp and tomato mixture.
