- Riso Venere (black rice) - 150 grams
- Vegetable broth - 500 milliliters
- Extra virgin olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Cherry tomatoes - 100 grams, halved
- Fresh basil - 10 grams, chopped
- Parmesan cheese (optional) - 20 grams, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the Riso Venere under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, bring the vegetable broth to a boil, then add the rinsed black rice.
- Reduce the heat to low, cover, and simmer for about 30 minutes, or until the rice is tender and the liquid is absorbed.
- In a separate skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the halved cherry tomatoes to the skillet and cook for 5 minutes until they soften.
- Once the rice is cooked, fluff it with a fork and add it to the skillet with the tomatoes. Mix well.
- Stir in the chopped basil, and season with salt and black pepper to taste.
- If desired, sprinkle grated Parmesan cheese on top before serving.
