Ingredients

  • Riso Venere (black rice) - 150 grams
  • Vegetable broth - 500 milliliters
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil - 10 grams, chopped
  • Parmesan cheese (optional) - 20 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the Riso Venere under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, bring the vegetable broth to a boil, then add the rinsed black rice.
  3. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the rice is tender and the liquid is absorbed.
  4. In a separate skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  5. Add the halved cherry tomatoes to the skillet and cook for 5 minutes until they soften.
  6. Once the rice is cooked, fluff it with a fork and add it to the skillet with the tomatoes. Mix well.
  7. Stir in the chopped basil, and season with salt and black pepper to taste.
  8. If desired, sprinkle grated Parmesan cheese on top before serving.
