  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Red bell pepper - 1 small, diced
  • Frozen peas - 50 grams
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • White wine - 50 ml
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  2. Add the diced carrot, zucchini, and red bell pepper to the pan. Cook for an additional 5 minutes, stirring occasionally.
  3. Stir in the Arborio rice, allowing it to toast for about 2 minutes until slightly translucent.
  4. Pour in the white wine and cook until it is mostly absorbed, stirring frequently.
  5. Gradually add the vegetable broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
  6. Add the frozen peas, dried thyme, salt, and black pepper, stirring to combine. Cook for another 2-3 minutes until the peas are heated through.
  7. Remove from heat and stir in the fresh parsley. Serve warm, garnished with additional parsley if desired.
