  • Potatoes - 200 grams, peeled and diced
  • Vegetable broth - 500 ml
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the diced potatoes to the pot and cook for about 5 minutes, stirring occasionally.
  3. Stir in the Arborio rice and cook for another 2 minutes, letting the rice absorb the flavors.
  4. Pour in the vegetable broth, bring to a gentle boil, then reduce the heat to a simmer. Cover and cook for about 15 minutes, stirring occasionally.
  5. Once the rice and potatoes are tender and most of the liquid is absorbed, remove from heat. Stir in the chopped parsley and season with salt and pepper to taste.
  6. Serve hot, optionally garnished with grated Parmesan cheese.
