- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced potatoes to the pot and cook for about 5 minutes, stirring occasionally.
- Stir in the Arborio rice and cook for another 2 minutes, letting the rice absorb the flavors.
- Pour in the vegetable broth, bring to a gentle boil, then reduce the heat to a simmer. Cover and cook for about 15 minutes, stirring occasionally.
- Once the rice and potatoes are tender and most of the liquid is absorbed, remove from heat. Stir in the chopped parsley and season with salt and pepper to taste.
- Serve hot, optionally garnished with grated Parmesan cheese.
