- Cannellini beans (canned) - 200 grams, drained and rinsed
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Celery - 1 stalk, diced
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Parmesan cheese - 30 grams, grated (optional)
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, cooking until softened, about 5-7 minutes.
- Stir in the Arborio rice and cook for an additional 2 minutes until the rice is slightly translucent.
- Add the vegetable broth, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer, covered, for about 15 minutes.
- After 15 minutes, stir in the rinsed cannellini beans and continue to cook for another 5 minutes, or until the rice is creamy and tender.
- Remove from heat and let it sit for a few minutes. Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
