- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Black pepper - to taste
- Salt - to taste
- Lemon juice - 1 tablespoon
- Fresh basil - a handful, chopped
Steps
- In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.
- Stir in the Arborio rice and toast for 2-3 minutes, stirring frequently to ensure the rice is well-coated with oil.
- Gradually add the vegetable broth, one ladle at a time, allowing the rice to absorb the liquid before adding more. Stir frequently.
- After about 15 minutes, add the fresh spinach to the pot and continue to cook until the rice is creamy and al dente, approximately 5 more minutes.
- Once the rice is cooked, remove from heat and stir in the nutritional yeast, lemon juice, black pepper, and salt to taste.
- Garnish with chopped fresh basil before serving.
