  • Vegetable broth - 500 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Black pepper - to taste
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Fresh basil - a handful, chopped

Steps

  1. In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.
  3. Stir in the Arborio rice and toast for 2-3 minutes, stirring frequently to ensure the rice is well-coated with oil.
  4. Gradually add the vegetable broth, one ladle at a time, allowing the rice to absorb the liquid before adding more. Stir frequently.
  5. After about 15 minutes, add the fresh spinach to the pot and continue to cook until the rice is creamy and al dente, approximately 5 more minutes.
  6. Once the rice is cooked, remove from heat and stir in the nutritional yeast, lemon juice, black pepper, and salt to taste.
  7. Garnish with chopped fresh basil before serving.
