  • Cherry tomatoes - 150 grams, halved
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Stir in the halved cherry tomatoes and cook for about 5 minutes until they start to soften.
  4. Add the cauliflower rice to the skillet and mix well, cooking for another 5-7 minutes until the cauliflower is tender and slightly golden.
  5. Gently fold in the mackerel fillets, breaking them into chunks, and cook for an additional 2-3 minutes to heat through.
