Ingredients

  • Arborio rice - 150 grams
  • Lean Italian sausage - 200 grams
  • Vegetable broth - 500 milliliters
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  3. Add the diced red bell pepper and zucchini to the skillet, cooking for another 5 minutes until slightly softened.
  4. Remove the casing from the lean Italian sausage and crumble it into the skillet. Cook until browned, breaking it up with a spoon, about 5-7 minutes.
  5. Stir in the Arborio rice, cooking for 1-2 minutes until the rice is slightly translucent.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding more broth. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
  7. Once cooked, remove from heat and stir in the grated Parmesan cheese, chopped parsley, salt, and black pepper to taste.
  8. Serve warm, garnished with additional parsley if desired.
