  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the dried porcini mushrooms in warm water for about 15 minutes, then drain and chop them, reserving the soaking liquid.
  2. In a saucepan, heat olive oil over medium heat. Add the chopped shallot and garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the arborio rice to the saucepan, stirring to coat the grains with oil. Toast the rice for 2 minutes.
  4. Pour in the vegetable broth and the reserved mushroom soaking liquid, then bring to a gentle simmer.
  5. Stir in the chopped porcini mushrooms, and cook for about 18-20 minutes, stirring occasionally, until the rice is creamy and al dente.
  6. Season with salt and black pepper to taste, then remove from heat and stir in the chopped parsley.
  7. Serve warm, garnished with additional parsley if desired.
