Steps
- Soak the dried porcini mushrooms in warm water for about 15 minutes, then drain and chop them, reserving the soaking liquid.
- In a saucepan, heat olive oil over medium heat. Add the chopped shallot and garlic, sautéing until translucent, about 3-4 minutes.
- Add the arborio rice to the saucepan, stirring to coat the grains with oil. Toast the rice for 2 minutes.
- Pour in the vegetable broth and the reserved mushroom soaking liquid, then bring to a gentle simmer.
- Stir in the chopped porcini mushrooms, and cook for about 18-20 minutes, stirring occasionally, until the rice is creamy and al dente.
- Season with salt and black pepper to taste, then remove from heat and stir in the chopped parsley.
