Ingredients

  • Arborio rice - 200 grams
  • Chicken breast, diced - 300 grams
  • Chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Frozen peas - 100 grams
  • Parmesan cheese, grated - 50 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the diced chicken breast and cook until browned, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the diced carrot and bell pepper to the skillet, cooking for another 5 minutes until softened.
  4. Stir in the Arborio rice, allowing it to toast for 1-2 minutes while stirring.
  5. Gradually add the chicken broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding more broth.
  6. Once the rice is nearly cooked (about 15 minutes), return the chicken to the skillet along with the frozen peas. Stir well and cook for an additional 5 minutes.
  7. Remove from heat and stir in the grated Parmesan cheese and chopped parsley. Season with salt and black pepper to taste.
  8. Serve warm, garnished with additional parsley if desired.
