- Arborio rice - 150 grams
- Fresh green peas - 100 grams (or frozen if unavailable)
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Parmesan cheese - 30 grams, grated (optional for serving)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 1 tablespoon, chopped for garnish
Steps
- In a saucepan, heat the vegetable broth and keep it warm over low heat.
- In a separate large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute, being careful not to burn it.
- Stir in the Arborio rice and toast it for 1-2 minutes until the grains are slightly translucent.
- Begin adding the warm vegetable broth to the rice, one ladle at a time, stirring continuously. Allow the rice to absorb the broth before adding more.
- After about 10 minutes of cooking, add the fresh or frozen peas to the rice. Continue adding broth and stirring until the rice is creamy and al dente, about 15-20 minutes total.
- Season with salt and black pepper to taste. If desired, stir in the grated Parmesan cheese for added creaminess.
- Remove from heat and let it rest for a couple of minutes. Serve hot, garnished with chopped fresh parsley.
