Ingredients

  • Arborio rice - 150 grams
  • Fresh green peas - 100 grams (or frozen if unavailable)
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Parmesan cheese - 30 grams, grated (optional for serving)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped for garnish

Steps

  1. In a saucepan, heat the vegetable broth and keep it warm over low heat.
  2. In a separate large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute, being careful not to burn it.
  4. Stir in the Arborio rice and toast it for 1-2 minutes until the grains are slightly translucent.
  5. Begin adding the warm vegetable broth to the rice, one ladle at a time, stirring continuously. Allow the rice to absorb the broth before adding more.
  6. After about 10 minutes of cooking, add the fresh or frozen peas to the rice. Continue adding broth and stirring until the rice is creamy and al dente, about 15-20 minutes total.
  7. Season with salt and black pepper to taste. If desired, stir in the grated Parmesan cheese for added creaminess.
  8. Remove from heat and let it rest for a couple of minutes. Serve hot, garnished with chopped fresh parsley.
