  • Onion - 1 small, finely chopped
  • Cherry tomatoes - 100 grams, halved
  • Fish stock - 500 ml
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced and zested
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the Arborio rice to the pan, stirring for 2-3 minutes until the rice is coated with oil and slightly toasted.
  3. Pour in the fish stock, bring to a simmer, and cook for about 10 minutes, stirring occasionally.
  4. Add the cherry tomatoes, white fish pieces, and shrimp to the rice, mixing gently. Cook for another 5-7 minutes until the seafood is cooked through and the rice is creamy.
  5. Stir in the lemon juice, lemon zest, and chopped parsley. Season with salt and black pepper to taste.
  6. Remove from heat and let rest for 2 minutes before serving. Garnish with additional parsley if desired.
