- Fish stock - 500 ml

- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced and zested

Steps
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the Arborio rice to the pan, stirring for 2-3 minutes until the rice is coated with oil and slightly toasted.
- Pour in the fish stock, bring to a simmer, and cook for about 10 minutes, stirring occasionally.
- Add the cherry tomatoes, white fish pieces, and shrimp to the rice, mixing gently. Cook for another 5-7 minutes until the seafood is cooked through and the rice is creamy.
- Stir in the lemon juice, lemon zest, and chopped parsley. Season with salt and black pepper to taste.
- Remove from heat and let rest for 2 minutes before serving. Garnish with additional parsley if desired.
