  • Fresh shrimp (peeled and deveined) - 200 grams
  • Vegetable broth - 500 ml
  • White wine - 100 ml
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 1 clove
  • Olive oil - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Parmesan cheese (grated) - 30 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the Arborio rice and cook for 1-2 minutes, stirring constantly, until the rice is slightly translucent.
  5. Pour in the white wine and cook until it has mostly evaporated.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process for about 15-20 minutes until the rice is creamy and al dente.
  7. In the last 5 minutes of cooking, add the shrimp to the risotto, stirring gently until they turn pink and are cooked through.
  8. Remove the skillet from heat and stir in the lemon zest, lemon juice, grated Parmesan cheese, chopped parsley, salt, and black pepper to taste.
  9. Serve immediately, garnished with additional parsley if desired.
