- White wine - 100 ml
- Onion (finely chopped) - 1 small
- Garlic (minced) - 1 clove
- Olive oil - 2 tablespoons
- Lemon zest - 1 teaspoon
- Lemon juice - 2 tablespoons
- Parmesan cheese (grated) - 30 grams
- Fresh parsley (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the Arborio rice and cook for 1-2 minutes, stirring constantly, until the rice is slightly translucent.
- Pour in the white wine and cook until it has mostly evaporated.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process for about 15-20 minutes until the rice is creamy and al dente.
- In the last 5 minutes of cooking, add the shrimp to the risotto, stirring gently until they turn pink and are cooked through.
- Remove the skillet from heat and stir in the lemon zest, lemon juice, grated Parmesan cheese, chopped parsley, salt, and black pepper to taste.
- Serve immediately, garnished with additional parsley if desired.
