Ingredients

  • Arborio rice - 150 grams
  • Shrimp (peeled and deveined) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Shallot (finely chopped) - 1 medium
  • Cherry tomatoes (halved) - 150 grams
  • Vegetable broth - 500 ml
  • White wine - 100 ml
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon (zested and juiced) - 1 medium
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the shallot and garlic, and sauté until translucent, about 2-3 minutes.
  3. Add the Arborio rice to the skillet and toast for 1-2 minutes, stirring frequently until the rice is slightly translucent.
  4. Pour in the white wine and let it simmer, stirring continuously until the liquid is mostly absorbed.
  5. Gradually add the warm vegetable broth, one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. Continue this process for about 15 minutes.
  6. After 15 minutes, stir in the shrimp and cherry tomatoes. Cook for an additional 5-7 minutes, or until the shrimp are cooked through and the rice is creamy.
  7. Remove from heat and stir in the lemon juice, lemon zest, and chopped parsley. Season with salt and black pepper to taste.
