- Arborio rice - 150 grams
- Shrimp (peeled and deveined) - 200 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Shallot (finely chopped) - 1 medium
- Cherry tomatoes (halved) - 150 grams
- Vegetable broth - 500 ml
- White wine - 100 ml
- Fresh parsley (chopped) - 2 tablespoons
- Lemon (zested and juiced) - 1 medium
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat the olive oil over medium heat. Add the shallot and garlic, and sauté until translucent, about 2-3 minutes.
- Add the Arborio rice to the skillet and toast for 1-2 minutes, stirring frequently until the rice is slightly translucent.
- Pour in the white wine and let it simmer, stirring continuously until the liquid is mostly absorbed.
- Gradually add the warm vegetable broth, one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. Continue this process for about 15 minutes.
- After 15 minutes, stir in the shrimp and cherry tomatoes. Cook for an additional 5-7 minutes, or until the shrimp are cooked through and the rice is creamy.
- Remove from heat and stir in the lemon juice, lemon zest, and chopped parsley. Season with salt and black pepper to taste.
