- Shallot - 1, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)
Steps
- Preheat the oven to 180°C (350°F).
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the shallot and garlic, sauté until translucent, about 3-4 minutes.
- Add the sliced mushrooms to the saucepan and cook for an additional 5-7 minutes until they are soft and have released their moisture.
- Stir in the Arborio rice, allowing it to toast for about 2 minutes, stirring frequently.
- Pour in the vegetable broth, add salt, black pepper, and thyme. Bring to a boil, then reduce the heat and simmer for 10 minutes, stirring occasionally.
- Transfer the rice mixture to a baking dish, cover it with aluminum foil, and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 5 minutes to allow the top to crisp up slightly.
- Once done, remove from the oven, stir in the chopped parsley and nutritional yeast (if using), and let it sit for 5 minutes before serving.
