  • Vegetable broth - 500 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Fresh rosemary - 1 sprig, chopped
  • Fresh thyme - 1 sprig, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Stir in the minced garlic, chopped rosemary, and thyme. Cook for an additional minute until fragrant.
  3. Add the Arborio rice to the saucepan and toast for about 2 minutes, stirring frequently until the rice is slightly translucent.
  4. Pour in the vegetable broth and bring to a gentle boil. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and has absorbed most of the liquid.
  5. Stir in the cannellini beans and season with salt and black pepper to taste. Cook for another 5 minutes to heat the beans through.
  6. Remove from heat and let sit for a minute before serving. Garnish with fresh parsley and a drizzle of olive oil if desired.
