Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Green onion - 2 stalks, chopped
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 100 ml

Steps

  1. Rinse and chop the cauliflower into florets, then pulse in a food processor until it resembles rice grains.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the cauliflower rice to the skillet and stir well. Cook for about 5 minutes, stirring occasionally until it begins to soften.
  4. Pour in the vegetable broth, then add chopped green onion, salt, and black pepper. Stir to combine and cover the skillet.
  5. Allow to simmer for another 10 minutes until the cauliflower is tender and the broth is mostly absorbed.
  6. Remove from heat and stir in grated Parmesan cheese and chopped parsley. Mix well and serve warm.
