- Green onion - 2 stalks, chopped
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 100 ml
Steps
- Rinse and chop the cauliflower into florets, then pulse in a food processor until it resembles rice grains.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the cauliflower rice to the skillet and stir well. Cook for about 5 minutes, stirring occasionally until it begins to soften.
- Pour in the vegetable broth, then add chopped green onion, salt, and black pepper. Stir to combine and cover the skillet.
- Allow to simmer for another 10 minutes until the cauliflower is tender and the broth is mostly absorbed.
- Remove from heat and stir in grated Parmesan cheese and chopped parsley. Mix well and serve warm.
