Steps
- Begin by removing the leaves and stem from the cauliflower, then cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice grains.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Add the diced red bell pepper and zucchini to the skillet. Cook for 5-7 minutes until the vegetables are tender.
- Stir in the halved cherry tomatoes, fresh basil, and dried oregano. Cook for another 2-3 minutes until the tomatoes start to soften.
- Add the cauliflower rice to the skillet, stirring well to combine all ingredients. Season with salt and black pepper to taste.
