Steps

  1. Begin by removing the leaves and stem from the cauliflower, then cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice grains.
  3. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  4. Add the diced red bell pepper and zucchini to the skillet. Cook for 5-7 minutes until the vegetables are tender.
  5. Stir in the halved cherry tomatoes, fresh basil, and dried oregano. Cook for another 2-3 minutes until the tomatoes start to soften.
