Ingredients

  • Arborio rice - 150 grams
  • Cherry tomatoes - 200 grams, halved
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 grams, chopped
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Add the diced red bell pepper and zucchini to the saucepan, cooking for about 5 minutes until slightly softened.
  3. Stir in the halved cherry tomatoes and cook for an additional 3 minutes until they begin to break down.
  4. Add the Arborio rice to the pan, stirring well to coat the rice with the vegetables and oil for about 2 minutes.
  5. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes, stirring occasionally, until the rice is creamy and cooked through.
  6. Once cooked, remove from heat and stir in the chopped fresh basil and nutritional yeast. Season with salt and black pepper to taste.
  7. Serve warm, garnished with additional basil if desired.
