- Arborio rice - 150 grams
- Italian sausage (gluten-free) - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 1 tablespoon, chopped
- Black pepper - to taste
- Salt - to taste
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Remove the sausage from its casing and add it to the skillet. Cook, breaking it apart with a spoon, until browned, about 5-7 minutes.
- Stir in the Arborio rice and cook for 2 minutes, allowing the rice to toast slightly.
- Gradually add the vegetable broth, one ladle at a time, stirring continuously. Let the rice absorb the broth before adding more. Continue this process for about 18-20 minutes, until the rice is al dente and creamy.
- Once the rice is cooked, stir in the grated Parmesan cheese, chopped parsley, salt, and black pepper to taste.
- Remove from heat and let it rest for a couple of minutes before serving.
