Ingredients

  • Arborio rice - 150 grams
  • Italian sausage (gluten-free) - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 1 tablespoon, chopped
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Remove the sausage from its casing and add it to the skillet. Cook, breaking it apart with a spoon, until browned, about 5-7 minutes.
  4. Stir in the Arborio rice and cook for 2 minutes, allowing the rice to toast slightly.
  5. Gradually add the vegetable broth, one ladle at a time, stirring continuously. Let the rice absorb the broth before adding more. Continue this process for about 18-20 minutes, until the rice is al dente and creamy.
  6. Once the rice is cooked, stir in the grated Parmesan cheese, chopped parsley, salt, and black pepper to taste.
  7. Remove from heat and let it rest for a couple of minutes before serving.
