Ingredients

  • Arborio rice - 150 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Shallots - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Mixed mushrooms (e.g., porcini, cremini) - 200 grams, sliced
  • Dry white wine - 100 ml
  • Nutritional yeast - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, bring the vegetable broth to a simmer and keep it warm over low heat.
  2. In a separate large skillet, heat the olive oil over medium heat. Add the chopped shallots and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced mushrooms to the skillet, and cook for another 5-7 minutes until the mushrooms are tender and have released their moisture.
  4. Stir in the Arborio rice and cook for 1-2 minutes until the rice is lightly toasted, stirring frequently.
  5. Pour in the dry white wine and let it simmer until the liquid is mostly absorbed, stirring continuously.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
  7. Once the rice is cooked, stir in the nutritional yeast, chopped parsley, and season with salt and black pepper to taste.
  8. Remove from heat and let it rest for a minute before serving.
