Ingredients

  • Arborio rice - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Cherry tomatoes - 150 grams, halved
  • Calamari - 100 grams, cleaned and sliced
  • Shrimp - 100 grams, peeled and deveined
  • Mussels - 150 grams, cleaned
  • White wine - 100 ml
  • Fish stock - 500 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced and zested
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  2. Add the Arborio rice to the saucepan, stirring for about 1-2 minutes until the rice is lightly toasted.
  3. Pour in the white wine, allowing it to evaporate while stirring the rice.
  4. Stir in the cherry tomatoes, calamari, and shrimp, cooking for an additional 3-4 minutes until the seafood begins to take on color.
  5. Gradually add the fish stock, one ladle at a time, stirring frequently until the rice absorbs the liquid before adding more. Continue this process for about 15-18 minutes until the rice is al dente.
  6. In the last 5 minutes of cooking, add the mussels, cover the pan, and let them steam until they open.
  7. Once all the seafood is cooked and the rice is creamy, remove from heat. Stir in the lemon juice, zest, chopped parsley, salt, and pepper to taste. Serve immediately.
