Ingredients

  • Arborio rice - 150 grams
  • Vegetable broth - 500 ml
  • Saffron threads - 0.1 grams
  • Olive oil - 2 tablespoons
  • Finely chopped onion - 1 small (about 50 grams)
  • Garlic - 1 clove
  • White wine - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a small bowl, soak the saffron threads in a couple of tablespoons of warm vegetable broth for about 10 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the Arborio rice and cook for 2-3 minutes, stirring frequently until the rice is lightly toasted.
  5. Pour in the white wine and cook until it has mostly evaporated, stirring constantly.
  6. Gradually add the vegetable broth, one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more.
  7. After about 10 minutes, add the saffron-infused broth and continue to cook, adding more broth as necessary, until the rice is creamy and al dente, about 18-20 minutes in total.
  8. Season with salt and black pepper to taste.
  9. Remove from heat and let it rest for a couple of minutes before serving.
  10. Garnish with freshly chopped parsley and serve warm.
