Ingredients

  • Arborio rice - 150 grams
  • Dry white wine - 150 ml
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Yellow onion - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Fresh peas - 100 grams (or frozen peas)
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until it becomes translucent.
  3. Add the minced garlic and sauté for an additional minute, being careful not to burn it.
  4. Stir in the Arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly.
  5. Pour in the dry white wine and stir until it is mostly absorbed by the rice.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow each ladle to be absorbed before adding the next. This process should take about 15 minutes.
  7. After 15 minutes, add the fresh peas and continue to cook until the rice is al dente and creamy, about 5 more minutes.
  8. Remove from heat and stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
  9. Serve hot, garnished with additional parsley and Parmesan if desired.
