  • Canned crushed tomatoes - 400 grams
  • Vegetable broth - 500 ml
  • Fresh basil - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and sauté for another 1 minute until fragrant.
  3. Stir in the Arborio rice and cook for 2-3 minutes, stirring frequently until the rice is lightly toasted.
  4. Pour in the canned crushed tomatoes and vegetable broth. Add salt and black pepper to taste.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 15-20 minutes, stirring occasionally, until the rice is creamy and al dente.
  6. Once cooked, remove from heat and stir in the chopped fresh basil. Adjust seasoning if necessary.
  7. Serve hot, garnished with grated Parmesan cheese if desired.
