- Parmesan cheese - 30 grams, grated (optional)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sauté for another 1 minute until fragrant.
- Stir in the Arborio rice and cook for 2-3 minutes, stirring frequently until the rice is lightly toasted.
- Pour in the canned crushed tomatoes and vegetable broth. Add salt and black pepper to taste.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 15-20 minutes, stirring occasionally, until the rice is creamy and al dente.
- Once cooked, remove from heat and stir in the chopped fresh basil. Adjust seasoning if necessary.
- Serve hot, garnished with grated Parmesan cheese if desired.
