Ingredients

  • Arborio rice - 160 grams
  • Fresh basil - 50 grams
  • Pine nuts - 30 grams
  • Garlic - 2 cloves
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 50 ml
  • Vegetable broth - 500 ml
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a small pan, toast the pine nuts over medium heat until golden, about 3-4 minutes. Stir frequently to avoid burning.
  2. In a blender, combine the toasted pine nuts, fresh basil, garlic, olive oil, and a pinch of salt. Blend until smooth to create the pesto.
  3. In a pot, bring the vegetable broth to a simmer and keep it warm on low heat.
  4. In a separate saucepan, add the Arborio rice and toast it over medium heat for about 2 minutes, stirring frequently.
  5. Add a ladle of warm vegetable broth to the rice, stirring continuously until absorbed. Repeat this process, adding broth gradually until the rice is creamy and al dente, about 18-20 minutes.
  6. Once the rice is cooked, remove it from the heat and stir in the pesto, grated Parmesan cheese, and lemon juice. Adjust salt and pepper to taste.
  7. Serve immediately, garnished with extra pine nuts and basil if desired.
