- Pine nuts - 30 grams
- Garlic - 2 cloves
- Parmesan cheese - 30 grams, grated
- Olive oil - 50 ml
- Vegetable broth - 500 ml
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a small pan, toast the pine nuts over medium heat until golden, about 3-4 minutes. Stir frequently to avoid burning.
- In a blender, combine the toasted pine nuts, fresh basil, garlic, olive oil, and a pinch of salt. Blend until smooth to create the pesto.
- In a pot, bring the vegetable broth to a simmer and keep it warm on low heat.
- In a separate saucepan, add the Arborio rice and toast it over medium heat for about 2 minutes, stirring frequently.
- Add a ladle of warm vegetable broth to the rice, stirring continuously until absorbed. Repeat this process, adding broth gradually until the rice is creamy and al dente, about 18-20 minutes.
- Once the rice is cooked, remove it from the heat and stir in the pesto, grated Parmesan cheese, and lemon juice. Adjust salt and pepper to taste.
- Serve immediately, garnished with extra pine nuts and basil if desired.
