Ingredients
- Black rice - 150 grams
- Vegetable broth - 500 ml
- Nori seaweed sheets - 2 sheets, torn into pieces
- Garlic - 2 cloves, minced
- Shallot - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Cherry tomatoes - 100 grams, halved
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the black rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat the olive oil over medium heat and sauté the minced garlic and chopped shallot until translucent, about 3-4 minutes.
- Add the soaked rice to the pot and stir for 1-2 minutes to coat the grains in the oil and aromatics.
- Pour in the vegetable broth and bring to a boil. Lower the heat, cover, and simmer for about 25 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, in a separate pan, lightly sauté the halved cherry tomatoes in a little olive oil until they soften, about 5 minutes.
- Add the torn nori sheets to the rice during the last 5 minutes of cooking, stirring to combine.
- Once the rice is done, remove it from the heat and let it sit covered for 5 minutes. Fluff with a fork and season with lemon juice, salt, and black pepper to taste.
- Serve the rice hot, topped with the sautéed cherry tomatoes and a sprinkle of fresh parsley.
