Ingredients

  • Black rice - 150 grams
  • Vegetable broth - 500 ml
  • Nori seaweed sheets - 2 sheets, torn into pieces
  • Garlic - 2 cloves, minced
  • Shallot - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the black rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, heat the olive oil over medium heat and sauté the minced garlic and chopped shallot until translucent, about 3-4 minutes.
  3. Add the soaked rice to the pot and stir for 1-2 minutes to coat the grains in the oil and aromatics.
  4. Pour in the vegetable broth and bring to a boil. Lower the heat, cover, and simmer for about 25 minutes or until the rice is cooked and the liquid is absorbed.
  5. While the rice is cooking, in a separate pan, lightly sauté the halved cherry tomatoes in a little olive oil until they soften, about 5 minutes.
  6. Add the torn nori sheets to the rice during the last 5 minutes of cooking, stirring to combine.
  7. Once the rice is done, remove it from the heat and let it sit covered for 5 minutes. Fluff with a fork and season with lemon juice, salt, and black pepper to taste.
  8. Serve the rice hot, topped with the sautéed cherry tomatoes and a sprinkle of fresh parsley.
