  • Shallot - 1, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth over medium heat and keep it warm.
  2. In a separate large pan, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, and sauté until softened, about 3-4 minutes.
  3. Add the Arborio rice to the pan and toast it for about 2 minutes, stirring frequently, until the rice is lightly translucent.
  4. Pour in the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process for about 15-20 minutes until the rice is al dente.
  5. Once the rice is cooked, add the fresh lemon juice, lemon zest, salt, and black pepper. Stir well to combine.
  6. Remove from heat and fold in the chopped parsley. Adjust seasoning if necessary.
  7. Serve warm, drizzling with a little extra olive oil if desired.
