- Shallot - 1, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the vegetable broth over medium heat and keep it warm.
- In a separate large pan, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, and sauté until softened, about 3-4 minutes.
- Add the Arborio rice to the pan and toast it for about 2 minutes, stirring frequently, until the rice is lightly translucent.
- Pour in the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process for about 15-20 minutes until the rice is al dente.
- Once the rice is cooked, add the fresh lemon juice, lemon zest, salt, and black pepper. Stir well to combine.
- Remove from heat and fold in the chopped parsley. Adjust seasoning if necessary.
- Serve warm, drizzling with a little extra olive oil if desired.
