Ingredients

  • All-purpose flour - 200 grams
  • Large eggs - 2
  • Fresh spinach - 150 grams
  • Ricotta cheese - 100 grams
  • Parmesan cheese (grated) - 50 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Nutmeg - a pinch

Steps

  1. In a bowl, mix the flour and a pinch of salt. Make a well in the center and add the eggs. Gradually incorporate the flour into the eggs until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
  3. While the dough is resting, sauté the minced garlic in olive oil over medium heat. Add the fresh spinach and cook until wilted. Remove from heat and let cool.
  4. In a bowl, combine the cooked spinach, ricotta cheese, grated Parmesan, salt, pepper, and nutmeg. Mix until well combined.
  5. Roll out the dough into thin sheets using a pasta machine or a rolling pin. Cut into squares, about 10 cm x 10 cm.
  6. Place a teaspoon of the spinach and ricotta filling in the center of each square. Fold the dough over to form a triangle and seal the edges tightly, ensuring no filling escapes.
  7. Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes or until they float to the top.
  8. Drain the ravioli and serve with a drizzle of olive oil and additional grated Parmesan.
