- Fresh spinach - 150 grams

- Olive oil - 2 tablespoons
- Garlic (minced) - 1 clove
- Salt - 1 teaspoon
- Black pepper - to taste
- Nutmeg - a pinch
Steps
- In a bowl, mix the flour and a pinch of salt. Make a well in the center and add the eggs. Gradually incorporate the flour into the eggs until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- While the dough is resting, sauté the minced garlic in olive oil over medium heat. Add the fresh spinach and cook until wilted. Remove from heat and let cool.
- In a bowl, combine the cooked spinach, ricotta cheese, grated Parmesan, salt, pepper, and nutmeg. Mix until well combined.
- Roll out the dough into thin sheets using a pasta machine or a rolling pin. Cut into squares, about 10 cm x 10 cm.
- Place a teaspoon of the spinach and ricotta filling in the center of each square. Fold the dough over to form a triangle and seal the edges tightly, ensuring no filling escapes.
- Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes or until they float to the top.
- Drain the ravioli and serve with a drizzle of olive oil and additional grated Parmesan.
