  • Fresh basil (chopped) - 2 tablespoons

  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Canned tomatoes (crushed) - 200 grams
  • Garlic (minced) - 1 clove
  • Sugar - 1 teaspoon
  • Fresh parsley (for garnish) - a few sprigs

Steps

  1. In a large bowl, mix the flour and salt. Make a well in the center and add the egg. Gradually incorporate the flour into the egg until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
  3. In a bowl, combine the ricotta, grated Parmesan, chopped basil, salt, and black pepper. Mix well to create the filling.
  4. Roll out the pasta dough into thin sheets using a pasta machine or a rolling pin. Cut into 10 cm squares.
  5. Place a teaspoon of ricotta filling in the center of each square. Fold the pasta over to form a triangle and press to seal the edges, ensuring no air is trapped inside.
  6. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add crushed tomatoes and sugar, simmer for 10 minutes to create a simple sauce.
  7. Bring a pot of salted water to a boil. Cook the ravioli for about 4-5 minutes until they float to the surface.
  8. Drain the ravioli and gently toss them in the tomato sauce. Serve hot, garnished with fresh parsley.
