Ingredients
- All-purpose flour - 150 grams
- Eggs - 1 large
- Ricotta cheese - 200 grams
- Parmesan cheese (grated) - 50 grams
- Fresh basil (chopped) - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Canned tomatoes (crushed) - 200 grams
- Garlic (minced) - 1 clove
- Sugar - 1 teaspoon
- Fresh parsley (for garnish) - a few sprigs
Steps
- In a large bowl, mix the flour and salt. Make a well in the center and add the egg. Gradually incorporate the flour into the egg until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- In a bowl, combine the ricotta, grated Parmesan, chopped basil, salt, and black pepper. Mix well to create the filling.
- Roll out the pasta dough into thin sheets using a pasta machine or a rolling pin. Cut into 10 cm squares.
- Place a teaspoon of ricotta filling in the center of each square. Fold the pasta over to form a triangle and press to seal the edges, ensuring no air is trapped inside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add crushed tomatoes and sugar, simmer for 10 minutes to create a simple sauce.
- Bring a pot of salted water to a boil. Cook the ravioli for about 4-5 minutes until they float to the surface.
- Drain the ravioli and gently toss them in the tomato sauce. Serve hot, garnished with fresh parsley.
