Ingredients

  • Gluten-free flour - 200 grams
  • Eggs - 2 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Ground beef - 150 grams
  • Ricotta cheese - 100 grams
  • Parmesan cheese (grated) - 50 grams
  • Garlic (minced) - 1 clove
  • Fresh parsley (chopped) - 2 tablespoons
  • Black pepper - to taste
  • Nutmeg - a pinch
  • Egg (for egg wash) - 1

Steps

  1. In a mixing bowl, combine the gluten-free flour, 2 eggs, olive oil, and salt. Knead until a smooth dough forms, then wrap in plastic wrap and let it rest for 30 minutes.
  2. In a skillet over medium heat, cook the ground beef until browned. Add the minced garlic and cook for another 2 minutes.
  3. Remove from heat and let the mixture cool slightly. Stir in the ricotta cheese, grated Parmesan, chopped parsley, black pepper, and a pinch of nutmeg until well combined.
  4. Roll out the rested dough on a floured surface until thin. Cut into circles using a round cutter or glass.
  5. Place a small spoonful of the meat filling in the center of each circle. Brush the edges with the beaten egg and fold over to form a half-moon shape, pressing to seal tightly.
  6. Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes or until they float to the surface.
  7. Remove with a slotted spoon and serve with your favorite sauce, such as marinara or a simple sage butter sauce.
