  • Yellow bell pepper - 100 grams, thinly sliced
  • Tomatoes - 300 grams, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 grams, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the diced tomatoes to the skillet, along with the dried oregano, salt, and black pepper. Simmer for about 10 minutes until the sauce thickens slightly.
  4. In a baking dish, spread a layer of the tomato sauce on the bottom.
  5. Arrange the sliced zucchini, eggplant, red bell pepper, and yellow bell pepper in alternating layers over the sauce, creating a visually appealing pattern.
  6. Drizzle the remaining tablespoon of olive oil over the arranged vegetables and sprinkle with chopped fresh basil.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and, if desired, sprinkle grated Parmesan cheese over the top of the vegetables.
  9. Return to the oven and bake for an additional 10 minutes, or until the vegetables are tender and the cheese is melted and golden.
  10. Allow to cool for a few minutes before serving.
