- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the diced tomatoes to the skillet, along with the dried oregano, salt, and black pepper. Simmer for about 10 minutes until the sauce thickens slightly.
- In a baking dish, spread a layer of the tomato sauce on the bottom.
- Arrange the sliced zucchini, eggplant, red bell pepper, and yellow bell pepper in alternating layers over the sauce, creating a visually appealing pattern.
- Drizzle the remaining tablespoon of olive oil over the arranged vegetables and sprinkle with chopped fresh basil.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and, if desired, sprinkle grated Parmesan cheese over the top of the vegetables.
- Return to the oven and bake for an additional 10 minutes, or until the vegetables are tender and the cheese is melted and golden.
- Allow to cool for a few minutes before serving.
