- Tomatoes - 200 grams
- Olive oil - 2 tablespoons
- Basil - 10 grams
- Oregano - 5 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash all the vegetables thoroughly. Slice the zucchini, eggplant, red bell pepper, and yellow bell pepper into thin rounds.
- Chop the onion and mince the garlic.
- In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté the onion and garlic until translucent.
- Add chopped tomatoes to the skillet and cook for about 5 minutes until they soften. Season with salt, black pepper, basil, and oregano.
- In a baking dish, spread the tomato mixture evenly at the bottom.
- Layer the sliced vegetables in a circular pattern on top of the tomato mixture. Alternate between the different vegetables to create an appealing design.
- Drizzle the remaining tablespoon of olive oil over the layered vegetables and sprinkle with salt and pepper to taste.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the vegetables are tender and slightly caramelized.
- Let it cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
