Ingredients

  • Zucchini - 150 grams
  • Eggplant - 150 grams
  • Red bell pepper - 100 grams
  • Yellow bell pepper - 100 grams
  • Onion - 100 grams
  • Garlic - 2 cloves
  • Tomatoes - 200 grams
  • Olive oil - 2 tablespoons
  • Basil - 10 grams
  • Oregano - 5 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash all the vegetables thoroughly. Slice the zucchini, eggplant, red bell pepper, and yellow bell pepper into thin rounds.
  3. Chop the onion and mince the garlic.
  4. In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté the onion and garlic until translucent.
  5. Add chopped tomatoes to the skillet and cook for about 5 minutes until they soften. Season with salt, black pepper, basil, and oregano.
  6. In a baking dish, spread the tomato mixture evenly at the bottom.
  7. Layer the sliced vegetables in a circular pattern on top of the tomato mixture. Alternate between the different vegetables to create an appealing design.
  8. Drizzle the remaining tablespoon of olive oil over the layered vegetables and sprinkle with salt and pepper to taste.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  10. Remove the foil and bake for an additional 15-20 minutes until the vegetables are tender and slightly caramelized.
  11. Let it cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
