Ingredients

  • Ground beef - 200 grams
  • Ground pork - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, finely chopped
  • Celery - 1 stalk, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Canned whole tomatoes - 400 grams, crushed
  • Red wine - 100 ml
  • Bay leaf - 1
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated
  • Fresh basil - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef and ground pork, cooking until browned, about 8-10 minutes. Break the meat apart with a wooden spoon as it cooks.
  4. Stir in the tomato paste and cook for 2-3 minutes, allowing it to caramelize slightly.
  5. Pour in the red wine, scraping the bottom of the pot, and let it reduce for about 5 minutes.
  6. Add the crushed canned tomatoes, bay leaf, oregano, salt, and black pepper. Stir well to combine.
  7. Bring the sauce to a simmer, then reduce the heat to low. Cover and let it cook for at least 1 hour, stirring occasionally.
  8. After an hour, remove the bay leaf and adjust seasoning if necessary. If the sauce is too thick, you can add a little water.
  9. Serve the ragù over your choice of pasta, topped with grated Parmesan cheese and fresh basil.
