- Celery - 1 stalk (about 50 grams), finely chopped
- Garlic - 3 cloves, minced
- Canned diced tomatoes - 400 grams
- Tomato paste - 2 tablespoons
- Vegetable broth - 200 ml
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Pasta (spaghetti or your choice) - 160 grams
- Fresh basil - for garnish (optional)
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the seitan, breaking it into small pieces, and cook for another 5 minutes until lightly browned.
- Pour in the canned diced tomatoes and tomato paste, stirring to combine.
- Add the vegetable broth, oregano, basil, salt, and pepper, and bring the mixture to a simmer.
- Reduce the heat to low and let the ragù simmer for about 20 minutes, stirring occasionally.
- While the ragù simmers, cook the pasta according to package instructions until al dente. Drain and set aside.
- Once the ragù is thickened, taste and adjust seasoning if necessary.
- Serve the ragù over the cooked pasta, garnished with fresh basil if desired.
