Ingredients

  • Seitan - 200 grams

  • Carrot - 1 medium (about 100 grams), finely chopped
  • Celery - 1 stalk (about 50 grams), finely chopped
  • Garlic - 3 cloves, minced
  • Canned diced tomatoes - 400 grams
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 200 ml
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Pasta (spaghetti or your choice) - 160 grams
  • Fresh basil - for garnish (optional)

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the seitan, breaking it into small pieces, and cook for another 5 minutes until lightly browned.
  5. Pour in the canned diced tomatoes and tomato paste, stirring to combine.
  6. Add the vegetable broth, oregano, basil, salt, and pepper, and bring the mixture to a simmer.
  7. Reduce the heat to low and let the ragù simmer for about 20 minutes, stirring occasionally.
  8. While the ragù simmers, cook the pasta according to package instructions until al dente. Drain and set aside.
  9. Once the ragù is thickened, taste and adjust seasoning if necessary.
  10. Serve the ragù over the cooked pasta, garnished with fresh basil if desired.
