Ingredients

  • Radishes - 300 grams, trimmed and chopped
  • Ricotta cheese - 150 grams
  • Fresh spinach - 100 grams, chopped
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste
  • Nutmeg - a pinch
  • Basil leaves - for garnish

Steps

  1. Steam or boil the chopped radishes for about 10 minutes until fork-tender. Drain and let cool.
  2. In a food processor, blend the cooked radishes until smooth. Add one large egg, salt, pepper, and a pinch of nutmeg; blend until well combined.
  3. Transfer the radish mixture to a bowl and gradually mix in almond flour (use about 50 grams), forming a dough. It should be pliable but not sticky. Adjust with more almond flour as needed.
  4. In a separate bowl, mix the ricotta cheese, chopped spinach, grated Parmesan, minced garlic, salt, and pepper until well combined.
  5. Roll the radish dough on a lightly floured surface (using almond flour) to about 3mm thickness. Cut into squares (approximately 8cm x 8cm).
  6. Place a tablespoon of the ricotta filling in the center of each square. Fold the dough over to form triangles, sealing the edges by pressing with a fork.
  7. Bring a pot of salted water to a boil. Carefully drop the ravioli into the boiling water and cook for 3-4 minutes or until they float to the surface.
  8. In a skillet, heat olive oil over medium heat. Once the ravioli are cooked, transfer them to the skillet to sauté for 2-3 minutes until lightly golden.
  9. Serve immediately, garnished with fresh basil leaves and additional grated Parmesan if desired.
