Steps
- Finely chop the radicchio and set aside.
- In a mixing bowl, combine almond flour and a pinch of salt, then create a well in the center.
- Crack the eggs into the well and mix until a dough forms, kneading it until smooth.
- Roll out the dough on a lightly floured surface to about 2 mm thickness, then cut into tagliatelle strips.
- Bring a large pot of salted water to a boil and cook the tagliatelle for 2-3 minutes until al dente. Drain and set aside.
