  • Radicchio - 200 grams
  • Almond flour - 100 grams
  • Eggs - 2 large

  • Heavy cream - 100 ml
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Finely chop the radicchio and set aside.
  2. In a mixing bowl, combine almond flour and a pinch of salt, then create a well in the center.
  3. Crack the eggs into the well and mix until a dough forms, kneading it until smooth.
  4. Roll out the dough on a lightly floured surface to about 2 mm thickness, then cut into tagliatelle strips.
  5. Bring a large pot of salted water to a boil and cook the tagliatelle for 2-3 minutes until al dente. Drain and set aside.
  6. In a large skillet, heat olive oil over medium heat, then add minced garlic and sauté until fragrant, about 30 seconds.
  7. Add the chopped radicchio to the skillet and cook until wilted, about 3-4 minutes.
  8. Pour in the heavy cream and stir, allowing it to simmer for 2-3 minutes until slightly thickened.
  9. Add the cooked tagliatelle to the skillet, tossing to coat in the sauce, then stir in grated Parmesan cheese.
  10. Season with salt and black pepper to taste, and garnish with fresh parsley before serving.
