Ingredients

  • Almond flour - 200 grams
  • Eggs - 2 large
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Radicchio - 150 grams, finely chopped
  • Ricotta cheese - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Nutmeg - 1/4 teaspoon
  • Black pepper - to taste
  • Butter - 30 grams
  • Fresh basil - for garnish

Steps

  1. In a mixing bowl, combine almond flour, eggs, and salt. Mix until a dough forms. Knead for about 5 minutes until smooth.
  2. Wrap the dough in plastic wrap and let it rest for 20 minutes at room temperature.
  3. In a skillet, heat olive oil over medium heat. Add finely chopped radicchio and sauté for about 5-7 minutes until wilted. Allow to cool slightly.
  4. In a bowl, mix the sautéed radicchio, ricotta cheese, grated Parmesan, nutmeg, and black pepper until well combined.
  5. Roll out the dough on a lightly floured surface until thin. Use a round cutter to cut out circles of pasta.
  6. Place a teaspoon of the filling in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges tightly.
  7. Bring a pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes until they float to the surface.
  8. In a separate pan, melt butter over medium heat. Add cooked ravioli and sauté gently for 2-3 minutes.
  9. Serve hot, garnished with fresh basil and a sprinkle of Parmesan cheese.
