- Salt - to taste
- Black pepper - to taste
- Parmesan cheese, grated - 20 grams (optional)
Steps
- Clean the puntarelle by removing any tough outer leaves and trimming the ends. Slice the greens into thin strips and place them in a bowl of cold water to crisp up for about 10 minutes.
- In a small mixing bowl, combine the anchovy fillets, minced garlic, olive oil, red wine vinegar, salt, and black pepper. Use a fork to mash the anchovies into a smooth dressing.
- Drain and dry the puntarelle, then add them to the bowl with the anchovy dressing. Toss until the greens are well coated.
- If desired, sprinkle the grated Parmesan cheese over the top and toss gently again. Serve immediately as a side dish.
