  • Red wine vinegar - 1 tablespoon (15 ml)
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese, grated - 20 grams (optional)

Steps

  1. Clean the puntarelle by removing any tough outer leaves and trimming the ends. Slice the greens into thin strips and place them in a bowl of cold water to crisp up for about 10 minutes.
  2. In a small mixing bowl, combine the anchovy fillets, minced garlic, olive oil, red wine vinegar, salt, and black pepper. Use a fork to mash the anchovies into a smooth dressing.
  3. Drain and dry the puntarelle, then add them to the bowl with the anchovy dressing. Toss until the greens are well coated.
  4. If desired, sprinkle the grated Parmesan cheese over the top and toss gently again. Serve immediately as a side dish.
