Ingredients

  • Arborio rice - 100g
  • Water - 600ml
  • Coconut milk - 200ml
  • Maple syrup - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Pinch of salt
  • Cinnamon - 1/2 teaspoon
  • Fresh fruits (such as berries or banana) - for topping
  • Chopped nuts (such as almonds or walnuts) - for topping

Steps

  1. Rinse the Arborio rice under cold water until the water runs clear.
  2. In a medium saucepan, bring 600ml of water to a boil and add a pinch of salt.
  3. Add the rinsed rice to the boiling water, reduce the heat to low, and simmer uncovered for about 15 minutes, stirring occasionally.
  4. Once the rice is tender and most of the water is absorbed, stir in the coconut milk, maple syrup, vanilla extract, and cinnamon.
  5. Continue to cook for another 5-10 minutes, stirring frequently, until the porridge reaches your desired creaminess.
  6. Remove from heat and let it sit for a couple of minutes to thicken slightly.
  7. Serve warm, topped with fresh fruits and chopped nuts.
