- Arborio rice - 100g
- Water - 600ml
- Coconut milk - 200ml
- Maple syrup - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Pinch of salt
- Cinnamon - 1/2 teaspoon
- Fresh fruits (such as berries or banana) - for topping
- Chopped nuts (such as almonds or walnuts) - for topping
Steps
- Rinse the Arborio rice under cold water until the water runs clear.
- In a medium saucepan, bring 600ml of water to a boil and add a pinch of salt.
- Add the rinsed rice to the boiling water, reduce the heat to low, and simmer uncovered for about 15 minutes, stirring occasionally.
- Once the rice is tender and most of the water is absorbed, stir in the coconut milk, maple syrup, vanilla extract, and cinnamon.
- Continue to cook for another 5-10 minutes, stirring frequently, until the porridge reaches your desired creaminess.
- Remove from heat and let it sit for a couple of minutes to thicken slightly.
- Serve warm, topped with fresh fruits and chopped nuts.
