  • Fresh rosemary - 1 teaspoon, chopped
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix together the Dijon mustard, olive oil, chopped rosemary, minced garlic, salt, and black pepper.
  3. Rub this mixture all over the pork tenderloin, ensuring it is well coated.
  4. Place the pork tenderloin on a baking tray lined with parchment paper.
  5. Surround the pork with halved cherry tomatoes and fresh spinach.
  6. Bake in the preheated oven for 20-25 minutes, or until the internal temperature of the pork reaches 63°C (145°F).
  7. Remove from the oven and let the pork rest for 5 minutes before slicing.
