  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 1 medium, sliced
  • Parmesan cheese - 30 grams, grated (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a small bowl, mix olive oil, chopped rosemary, chopped thyme, minced garlic, salt, black pepper, and lemon juice to create a marinade.
  3. Rub the marinade all over the pork tenderloin and let it sit for at least 15 minutes to absorb the flavors.
  4. While the pork is marinating, prepare the vegetables by tossing the cherry tomatoes and sliced zucchini with a drizzle of olive oil, salt, and pepper.
  5. Place the marinated pork tenderloin on a baking sheet and surround it with the prepared vegetables.
  6. Roast in the preheated oven for 20-25 minutes, or until the pork reaches an internal temperature of 63°C (145°F).
  7. Remove from the oven and let the pork rest for 5 minutes before slicing.
