- Lemon juice - 1 tablespoon
- Cherry tomatoes - 150 grams, halved
- Zucchini - 1 medium, sliced
- Parmesan cheese - 30 grams, grated (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- In a small bowl, mix olive oil, chopped rosemary, chopped thyme, minced garlic, salt, black pepper, and lemon juice to create a marinade.
- Rub the marinade all over the pork tenderloin and let it sit for at least 15 minutes to absorb the flavors.
- While the pork is marinating, prepare the vegetables by tossing the cherry tomatoes and sliced zucchini with a drizzle of olive oil, salt, and pepper.
- Place the marinated pork tenderloin on a baking sheet and surround it with the prepared vegetables.
- Roast in the preheated oven for 20-25 minutes, or until the pork reaches an internal temperature of 63°C (145°F).
- Remove from the oven and let the pork rest for 5 minutes before slicing.
