- Pork loin cutlets - 300 grams
- Prosciutto - 100 grams
- Fresh sage leaves - 8 leaves
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Dry white wine - 100 ml
- Salt - to taste
- Black pepper - to taste
Steps
- 1. Place the pork loin cutlets between two sheets of plastic wrap and gently pound them to about 1 cm thickness using a meat mallet.
- 2. Season both sides of the pork cutlets with salt and black pepper.
- 3. Lay two slices of prosciutto on each cutlet, followed by 2 sage leaves on top of the prosciutto.
- 4. Heat olive oil in a large skillet over medium-high heat. Once hot, carefully add the cutlets, prosciutto side down.
- 5. Cook for about 3-4 minutes until the prosciutto is crispy and the pork is golden brown, then flip and cook for another 2-3 minutes until the pork is fully cooked.
- 6. Remove the cutlets from the skillet and set aside on a plate, covering with foil to keep warm.
- 7. In the same skillet, add the butter and white wine, scraping the bottom to deglaze. Let it simmer for about 2-3 minutes until slightly reduced.
- 8. Pour the sauce over the pork cutlets and serve immediately.
