- Garlic - 3 cloves, minced
- Carrot - 1 small, diced
- Celery - 1 stalk, diced
- Canned crushed tomatoes - 200 grams
- Red wine - 50 ml
- Fresh basil - 10 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Zucchini - 2 medium, spiralized or sliced
- Parmesan cheese - 30 grams, grated (for serving)
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced pork shoulder and cook until browned on all sides, about 5-7 minutes.
- Add the chopped onion, minced garlic, diced carrot, and diced celery to the skillet. Sauté until the vegetables are softened, about 5 minutes.
- Pour in the red wine, scraping the bottom of the skillet to deglaze. Allow to simmer for 2-3 minutes until slightly reduced.
- Stir in the canned crushed tomatoes, salt, black pepper, and chopped basil. Bring the mixture to a gentle simmer.
- Cover and cook on low heat for 30-35 minutes, stirring occasionally, until the pork is tender and the sauce has thickened.
- While the ragu is cooking, prepare the zucchini. Heat a separate skillet over medium heat and add the spiralized or sliced zucchini, sautéing for about 3-4 minutes until just tender. Season lightly with salt and pepper.
- To serve, place the zucchini on plates and top with the pork ragu. Garnish with grated Parmesan cheese and additional fresh basil if desired.
